10 new cucumbers 10-12см long; 2 tbsp salt; dill heads or seeds; cherry and oak leaves (horseradish or blackcurrant leaves are also suitable); whole black pepper

Half Sour Pickles

Prepare the brine: dissolve 2 tbsp salt in 1l (33.8oz) cold water, add vodka (optional). Wash the cucumbers trimming the ends and place them in a bowl with half the leaves and dill. Add the pepper and place the remaining ingredients on top. Pour over the brine and cover with cling film. Leave to stand in the fridge overnight. Slice lengthways in halves or quarters and serve with vodka or as a desert dipping them in honey.
