1 cup quinoa flour; 1 cup corn flour; ½ tbsp honey (or 1-2 tbsp maple syrup); a handful almonds; ½ cup flax seeds; 1 tsp thyme; 2 eggs (separated); 3 tbsp olive oil; ½ tsp soda; 1 tsp salt
Gluten Free Bread
Grind the nuts, seeds, and quinoa into flour. Add the soda and salt and mix with the corn flour. Mix together the egg yolk, honey, butter, and 1 cup water. Pour the mixture into the dry ingredients and mix well. Whisk the egg whites into a foam and carefully fold them into the dough. Bake in an oven for 35-40 minutes at 180ºC (in a frying or cast iron pan with a lid). Remove the bread from the pan and cover it with a towel. Leave to cool for six hours. Serve with honey, maple syrup, butter and milk.
