2 lamb’s testicles; 4-6 spring onions (white part); a handful of mung bean sprouts; 1/2 chilli pepper; 1/3 sweet pepper; 2 cloves garlic; a piece of ginger the size of your little finger; 2 tbsp soy sauce; 1 tbsp oyster sauce; 4-6 tbsp vegetable oil; a pinch of cumin

Stir-fried Lamb Testicles

Prepare the testicles: remove the skin, cut them in half , wash, dry and cut them into thin strips widthways. Fry them on a high heat for one minute in half the oil, remove them from the pan and set them aside. Fry the finely chopped garlic, ginger and chilli in a clean pan with the remaining oil on a high heat for 30 seconds. Add the sweet pepper cut into thin strips, add the bean sprouts and cumin. Cook for a minute and then add the testicles, onion (cut on the skew), soy and oyster sauces and heat through. Serve immediately.
