4 trimmed squid; ½ medium sized fennel bulb; ½ carrot; 2 chilli peppers; 2 cloves garlic; 1 tbsp oyster sauce; 4 tbsp vegetable oil; 1 tsp sesame oil; a couple of peppercorns; ½ tsp Szechuan pepper; 2-3 tbsp soy sauce; 1 tbsp black soy sauce

Stir Fry Squid

Cut the squid in half lengthways and score it on the inside in a grid pattern. Cut the squid pieces widthways into 2cm strips. Heat some oil in a wok on a high heat and fry the peppercorns for a couple of minutes before removing them from the pan. Add half the squid, fry it through quickly, remove it from the pan and set aside. Fry the remaining squid, add the finely chopped garlic and chilli pepper. Stir well, remove the contents of the pan and set them aside. Add the vegetables cut into strips and cook for a couple of minutes before returning the squid to the wok (keep any liquid that has collected in the bowl). Heat the squid through and add the oyster sauce, soy sauce, squid juices, and sesame oil. Stir thoroughly, cook for a minute and serve.
