300g lean pork; a handful uncooked peeled prawns; 2 black Chinese mushrooms; 2-4 leaves Chinese cabbage; 5cm fresh ginger; ready-made won ton pastry; 1 fresh chilli pepper; a bunch spring onions; 2 tbsp soy sauce, 2 tsp sesame oil; white of one egg

Steamed Won Ton (雲吞, Wonton)

Soak the mushrooms for a few hours. Meanwhile remove any film from the meat and cut it into thin pieces along the fibres and then dice into pieces the size of lentils. Dice the peeled prawns so that the pieces are twice the size as the meat pieces. Roll the mushrooms into tubes and slice into strips. Dice them finely. Cut the cabbage into thin strips. Add the finely chopped ginger, garlic, chilli, spring onion, mushrooms, 2 tbsp soy sauce, 2 tbsp rice wine (or sherry), 1 tbsp sesame oil, and the egg white to the mince. Mix well, add the cabbage and mix again. Place the filling on the won ton pastry; if necessary brush the edges with water before pinching them together. Place the won ton on the tiers of a steamer brushed with oil and steam for 12 minutes. Drizzle with sesame oil and sprinkle with finely chopped spring onion and chilli before serving.
