500g small fresh squid; 1 egg; olive oil, lemon juice; white bread crusts; a bunch of parsley; 1-2 cloves garlic; salt, black pepper

Steamed Stuffed Squid (Calamari ripieni)

Clean the squid, removing the tentacles from the heads and wash well. Pour boiling water over the tentacles and chop them finely. Add the finely chopped parsley, breadcrumbs, crushed garlic, salt and pepper, oil and egg and mix well. Stuff the squid with the mixture so that they are 2/3 full and place them in a greased steamer. Steam them for 10 minutes and serve immediately drizzled with a mixture of the lemon juice and finely chopped parsley.
