1 kg mussels; 1 ½ cup breadcrumbs; a handful parmesan; 3-4 tbsp olive oil; clove garlic; a handful finely chopped parsley; salt, black pepper

Mussel Gratin

If the mussels are cooked and frozen defrost them on the bottom shelf of the fridge without opening the packaging. If the mussels are fresh, steam them until the shells open (discarding any that don’t). Mix the breadcrumbs with the parsley, garlic puree, oil, and some salt and pepper. Layer the mussels on a baking tray with some coarse ground sea salt and cover it with the breadcrumb mix. Bake them under a grill 15 cm (6 inches) away from the flame for 3-5 minutes until golden brown. Serve immediately with some lemon quarters.
