1.5 cups black beans; 1 onion; 3-4 tbsp lard; dry chilli pepper; a pinch of cumin; salt

Soak the beans overnight. Drain the water and cover them with water once more. Bring to the boil and simmer for 1.5 hours or until the beans are soft. Season with salt and cook for another 30 minutes. Remove from the heat and leave to cool without draining. Soften the finely chopped onion in the lard. Add the ground cumin and dry pepper. Gradually add the beans together with the liquid and bring to the boil. Mash with a potato masher and cook on a high heat for 10-20 minutes to boil off any remaining liquid. Shake the pan continuously so that the beans do not stick at the edges. Serve as a spread with tortillas. Store in a sealed container in the fridge.
