2 cleaned cod fillets; 2-4 garlic cloves; 1-2 fresh hot peppers; 1 cup of olive oil, salt, black pepper

Cod in pil-pil sauce (Bacalao al pil-pil)

Thaw cod overnight in a refrigerator, clean, wash, remove the fillets, pat dry with a kitchen towel, cut the fillets across into slices 2.5” wide. Clean garlic, cut crosswise into thin slices and fry in oil with pepper over low heat until golden, remove garlic and peppers on a paper towel and set aside. In the same oil fry cod on one side (skin side up) for 7-8 minutes over high heat, constantly moving the ceramic pan back and forth, until the sauce thickens, add salt and pepper. Return peppers and garlic to the pan with fish, serve in the same pan with fresh white bread.
