220g feta or manouri cheese; 200g filo pastry; 1 egg; a bunch parsley or mint leaves; 60 ml belted butter; salt, black pepper


Grate or crush the cheese, add the egg and herbs, season with salt and mix well. Cut the pastry into 10cm strips. Brush a pastry strip with butter, and put the filling on the corner. Taking two layers fold the corner into a triangle and fold it over across the whole length of the pastry. Make the remaining pies in the same way and place them on a baking tray lined with baking paper. Brush with melted butter and bake at 200ºC for 15 minutes.
