1.2 kg tomatoes; 400g canned tomatoes in juice; 2-4 cloves garlic; 4-6 tbsp olive oil; a handful basil leaves; salt; black pepper

A basic tomato sauce (Sugo di pomodoro)

Fry the finely sliced garlic in some olive oil on a low heat. Add the fresh tomatoes and bring them to the boil Add the tinned tomatoes and cook on a low heat for 1.5 hours. Squash the tomatoes and season well. Add a pinch of sugar if necessary. Add some basil leaves and cook for another 30 minutes on a low heat. Transfer the sauce to sterilized jars and store them in the fridge. Use as a base for pizzas or other Italian dishes.
